Today is my daughter Lauren’s 9th Birthday! I wanted to do something a little special for her this morning before school. I saved this recipe from a girlfriend a few months ago who got the recipe from Pinterest. I thought today would be perfect to try it out!
I tweaked it just a tad to my liking, and seriously they were delish!
Ingredients:
1 1/3 cups white flour
2 teaspoons of baking powder
2 tablespoons of sugar
1/2 teaspoon of salt
1 box of Pillsbury Funfetti cake mix
1/3 cup of canola oil
3 eggs
2 2/3 cup of milk
Sprinkles
Whip Cream
Frosting:
1 cup of powdered sugar
2 tablespoons of butter, softened
2 tablespoons of half and half cream
1/2 teaspoon of vanilla
Instructions:
1 – In a large bowl combine the flour, baking powder, salt, sugar and cake mix. Set aside. In another small bowl mix in the eggs, milk and oil. Add the wet ingredients to the dry ingredients and mix together. Batter will be thick, but you can add more milk if you’d like them thinner.
2 – Heat your griddle to about 275 degrees. Spray it with cooking spray and pour the batter onto the pan. Cook the pancakes for about 3 minutes on each side.
3 – This recipe made us about 10 normal size pancakes and 3 small pancakes.
4 – In a small bowl, stir together the powdered sugar, softened butter, cream and vanilla. I recommend doubling the frosting recipe because I found I liked more of the frosting on the pancakes. We also microwaved the frosting for about 15 seconds, stirred and drizzled on top. You add the whip cream and some sprinkles and you’re set!
